Stuffed Trout

I like mushrooms, and I like onions, and I like spinach.  So I mixed them all together and stuffed them in some fresh fish for a delicious main dish. Try our Stuffed Trout!

Ingredients
  

  • 2 tsp oil
  • 4 oz mushrooms sliced
  • 1 onion chopped
  • 1 package frozen spinach (thawed) or bag of fresh spinach
  • 1/2 cup shredded cheddar cheese
  • 4 fillets trout or other white fish should be thin
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup breadcrumbs

Instructions
 

  • Preheat oven to 450. Prepare a baking dish.
  • Heat oil in skillet on medium high heat. Add mushrooms and onions, cook until liquid evaporates, about 10 minutes. Stir in spinach and cheese. 
  • Lay trout, skin side up, on work surface. Sprinkle with salt and pepper.
  • Top fillets with spinach mixture. Roll fish and place in baking dish, seems side down. Sprinkle with breadcrumbs. 
  • Bake until trout is opaque in center and crumbs are golden, about 15 minutes.
