Greek Zucchini Boats

Ingredients
  

  • 4 zucchini
  • 1 red onion chopped
  • 1 lbs. ground meat, beef or lamb
  • 1/2 cup diced tomatoes
  • 1/2 cup Kalamata olives sliced
  • 1/2 cup Feta optional
  • Tzatziki sauce optional

Instructions
 

  • Preheat oven to 350 degrees. Spray baking dish with cooking spray or coat lightly with oil
  • Make the zucchini boats. Cut ends off the zucchini and cut in half lengthwise. Using a spoon, hollow out the center of the zucchini halves, leaving about 1/4-1/2 inch shell. Place flesh side up in glass baking dish.
  • Prepare a sauté pan with cooking spray and heat to medium.
  • Add in onion and ground meat. Cook until browned, 4-5 minutes.
  • Add diced tomatoes, olives, and oregano, stir to combine.
  • Stuff the zucchini boats with the meat mixture. Cover pan with foil and bake for 25 minutes.  Remove from oven, uncover and add feta.  Return to oven for 5 minutes.
  • Remove from oven, plate, and serve with side of Tzatziki sauce.

Notes

Recipe is  10 Green, Blue, or Purple WW points.  Are figured using 90% lean ground beef and include both feta cheese and Tzatiki sauce.  Save 2 points by removing cheese.
