Bacon Cheese Burger Frittata
When you can't get to a grill, but want a burger, try this!

- 1 lbs ground beef
- 6-8 eggs lightly beaten
- 4-6 slices bacon
- 1 red onion diced
- 12 cherry tomatoes halved or quartered
- 1 tsp beef seasoning*
- 1 cup shredded cheddar cheese optional
Preheat oven to to 375. Heat a cast iron or oven safe skillet over medium high heat.
When skillet is hot, add bacon. Cook bacon until crisp, remove and set aside to cool. Drain bacon fat from pan.
Add ground beef and seasoning to skillet and brown. When meat is about half way done, add red onion. Continue to stir until meat is cooked.
While meat is cooking, whisk eggs in large bowl. Crumble the cooled bacon.
When meat is browned, drain some fat if desired. Sprinkle bacon over meat and onions. Pour eggs over pan. Top with chopped tomatoes and cheese.
Place in oven. Cook until eggs set and cheese is melted, about 20 -25 minutes.
Serve hot.
