A quick and easy side I love to pair with tacos or fajitas.  This avocado and tomato salad makes wonderful use of all those fresh vegetables that are coming into season – tomatoes and onions!

A quick and easy side I love to pair with tacos or fajitas.  This avocado and tomato salad makes wonderful use of all those fresh vegetables that are coming into season – tomatoes and onions!

Ingredients

  • 2 avocado peeler, pitted, and diced
  • 1 sweet onion chopped
  • 1 green bell pepper chopped
  • 1/2 pint cherry tomatoes halved or quartered
  • 1/4 cup fresh cilantro
  • 1/2 lime juiced
  • salt and pepper to taste

Instructions

  • In a medium bowl, combine avocados, onion, bell pepper, tomato, cilantro and lime juice.
  • Gently toss until evenly coated
  • Season with salt and pepper

Ingredients for Avocado and Tomato Salad

This has got the be the easiest side dish not involving a microwave ever.  To be honest, it’s probably easier that most involving a microwave anyway. It’s so quick and easy, it barely warrants a blog post, but here is is anyway!

Chopped Tomatoes for Avocado Salad

Just start by chopping everything up.  Ok, so there’s avocados involved, and sometimes those are a little tricky to peel, but it doesn’t need to look pretty for this salad! Quarter or halve or tomatoes, depending on how large they are. Chop up your onion and pepper to, removing the seed.

Then just combine everything except the salt and pepper in one bowl. You’ll want to use a large bowl as is it make it easier to mix. Because the avocados are soft, I like to use a rubber spatula to gently turn everything to coat. Mix well to coat your tomatoes, avocado, pepper, and onion in the lime juice.

Finally, season with salt and pepper to taste.

This is a super quick, super easy, super delicious side that goes great with some many of our Mexican inspired dishes like our Fajita Chicken Bake or Mexican Frittata. What a great way to top off Taco Tuesday!  Make sure to add it to your next meal plan!
