Crock Pot Chicken Fajita Salad

Fajita chicken and vegetables are a great dish to make. Not only is it hard to go wrong with crock pot chicken fajitas, the filling can be so versatile. Of course you can stick it in a tortilla for fajitas, a hard shell for a taco. Personally, I like to take this dish and serve it over lettuce for a taco salad.

Equipment

  • Crock Pot

Ingredients

  • 1 lbs. Chicken Breast
  • 1 onion sliced
  • 1 Green Pepper sliced
  • 2 cups salsa
  • 1 can diced green chilis drained
  • 1 package fajita seasoning
  • 2 tbsp olive oil

Instructions

  • Combine all ingredients in crock pot. Cook on “low” setting for 6 hours.
  • Use as fillings for tacos, fajitas or topping for salad.
  • Don't forget your favorite toppings like sour cream, cheese, salsa, or guacamole

Ingredients for Crock Pot Chicken Fajitas

Don’t you just love recipes with only one line of instructions?  Combine all ingredients and turn on crock pot!  Really, that’s all there is. There’s a few more lines in the recipe card because the program didn’t like that one step. Seriously, my website didn’t even believe me when I said I had a one step recipe!

The reason the instructions are so simple is because this was a freezer recipe.  For the freezer version there are four steps:  Combine all ingredients in freezer bag. Freeze.  Thaw.  Place ingredients in crock pot.

 Since this is not going in the freezer, just straight into the pot, I’m layering my ingredients.  No real reason, I just do it this way.  I start by cutting up my vegetables and placing them in the bottom of the crock pot.

 Then top with chicken.  I’m just throwing large chicken breast in, I’ll shred them later.  Then I’ll sprinkle my seasoning over the chicken breasts. you can use any type of taco or fajita seasoning you’d like, but if you are gluten free, just be sure to check the ingredients. Some mixes include flour.

 Finally I’ll top everything with the salsa and diced chilies.  Cover and cook.  Before serving, shred the chicken if desired. I find that the chicken is so moist, that it tends to just come apart as I lift it out of the crock pot. Stir to mix the meat and vegetables.

I love how versatile this dish is.  You can use it to make tacos or fajitas, or place it over lettuce for a fajita salad.  I love to use the leftovers for a fajita scramble the next morning.
